we made this and gave it as valentine's treats. when we sampled it, we liked it so much, that we made some more. i thought you might like to make some, too.
warm your oven to 350 degrees.
mix your favorite nuts together in a cake pan (pecans, pistachios, cashews, pepitas, etc.), about 6 cups total.
put this pan in the warm oven.
melt 1/2 c granulated sugar in a heavy (cast iron) skillet over medium heat.
do not stir the sugar; shake the skillet periodically; the sugar will liquefy.
meanwhile, grease a large cookie sheet.
when the sugar is completely melted, stir 2 Tbs butter into the melted sugar.
stir the warm nuts into the sugar glaze. completely coat the nuts.
spread the glazed nut mixture on the greased cookie sheet to cool.
when cool, break up the glazed nuts.
add dried strawberries, slivered dehydrated apricots, and pretzel pieces to your taste.
this would be an excellent weekend snack. easy, tasty, lots of protein and nutrients. and it's pretty, too. :) eat it next to a bowl of yogurt or on top of a green salad (wouldn't THAT be good?) and you've got breakfast or lunch going on.
happy friday, my friends!
