Using things from my pantry (pasta, canned chicken, garlic powder, canola oil) and my fridge (half an avacado, parmesan cheese, and small tomoatoes), I whipped up an easy, tasty lunch.
To make, just boil the pasta and drain. Stir in a tablespoon or two of oil, garlic powder to taste, diced avacado, drained chicken, and some grated parmesan. Warm through. Top with tomatoes and extra grated parmesan. Enjoy!
This would be so easy to gourmet-ify. You could use olive oil, minced- fresh garlic, chopped rotisserie chicken, freshly shaved or grated parmesan. Served with a salad and some crusty garlic bread this would be a great evening meal, as well. Just follow it up with a bit of dark chocolate and you're set for company!
